1/4 Cauliflower Head
1/2 Teaspoon Vegetable Oil

1/4 Medium Yellow Onion, Minced

Apparently it’s Superbowl Sunday. For most of America, this is something eagerly anticipated. For me, the advent of the event was a complete surprise. I didn’t even know until a friend asked me yesterday, “What are you doing for Superbowl Sunday?”
My reply: “When’s that?”
I’m neither watching football nor going to a bar tonight, although that probably comes as no surprise. But in the spirit of this Great American Holiday, I decided to whip up something I would serve if I were having a Superbowl Party. Which I’m not.
This recipe, inspired by a little bite from Oprah’s magazine, is super quick, easy, and extremely healthy. Even if you’re not looking for half-time snacks or kick-off bites, this dip is great for any occasion when you’re entertaining friends or family.
To prepare, simply break a quarter of a head of cauliflower down into small florets. Boil these in salted water for approximately 10 minutes, or until the cauliflower softens.
Meanwhile, sautee a quarter of a yellow onion, finely diced. Once the onions begin to turn transluscent, add in the dijon mustard, salt, and curry powder. Cook until aromatic.
When the cauliflower is done, drain the water and add the florets into the pan with the onion. The cauliflower, if fully cooked, should break down easily. I mashed mine with the back of a wooden spoon, although a food processor or magic bullet could do the trick, too.
When the cauliflower is completely smooth, add in the additional spices and the grated parmesan, and then remove from heat.
In a small mixing bowl, combine the greek yogurt, mixing in until fully incorporated. The texture should be smooth and creamy, with a few pieces of diced onion remaining for texture.
Serving this dish with a traditional bag of store-bought potato chips would compromise its healthy integrity and deliciate Indian flavor. Using Trader Joe’s Whole Wheat Reduced Carb Tortillas, you can make dozens of healthy, low-calorie chips with almost no additional effort. I crisped my tortillas in the same pan used to prepare the cauliflower dip, imparting a deliciate residual flavor.
Simply sprinkle the tortilla with a little fresh sea salt, and cook until the tortilla begins to brown and crisp. For extra crunchy tortilla chips, dress with a little zero-calorie butter spray before putting them in the pan.
One tortilla is only 45 calories, and this makes anywhere from 9-12 chips.For those of you keeping score, that makes your game-day total only 60 calories for chips and dip.
Baby carrots, roasted pearl onions, and – of course – cauliflower florets are other easy dippers that will perfectly compliment the Curried Cauliflower Dip.
Tonight, many of you will continue cheering on your favorite team, celebrating with groups of friends and enjoying the competition. Me? I’m going to feast on my Cauliflower Dip and watch Downton Abbey. Still partaking in a television sensation, just one from a different country.
